Turkey Timeline Calculator

Turkey Thaw & Cook Time Calculator

Enter when you want to serve — get the full timeline: when to start thawing, when the bird goes in the oven, and when it's ready. Computed from USDA FSIS rules.

Time charts are estimates. Many variables affect roasting time — the only reliable doneness check is a food thermometer at 165°F (USDA FSIS). This tool schedules dates; it does not replace your thermometer.

How This Timeline Works

Turkey scheduling is three chained steps, and most calculators only do one of them. This tool chains all three: thaw → roast → rest, then works backwards from your serving time.

  • Thaw — refrigerator thawing takes 1–6 days depending on weight (24 hours per 4–5 lb); cold water takes 30 minutes per pound with water changed every 30 minutes (USDA FSIS, Safe Thawing).
  • Roast — at 325°F, roasting takes roughly 2¾ to 5 hours depending on weight, longer if stuffed (USDA FSIS, Safe Cooking chart).
  • Rest — let the bird stand 20 minutes before carving so the juices set (USDA FSIS, Safe Cooking).

The calculator uses the longer end of each range on purpose: starting thaw a day early is harmless, starting late is a food-safety problem. You'll see the full range too.

Food Safety Notes

  • 165°F everywhere that matters. Check the innermost thigh, the wing, the thickest breast part, and the center of stuffing — all must reach 165°F with a food thermometer.
  • Never thaw on the counter. Room temperature lets bacteria multiply rapidly. Refrigerator or cold water only.
  • Cold-water thawed means cook now. USDA requires immediate cooking after cold-water thawing — that's why this tool schedules cold-water start on cooking day.
  • Change the water every 30 minutes. This keeps the water cold enough to stay out of the danger zone.
  • Cook stuffing separately if possible. If stuffing the bird, mix just before stuffing, fill loosely, and verify the stuffing center hits 165°F.

How to Use This Calculator

  1. Weigh your turkey (or read the label) and enter the weight.
  2. Choose stuffed or not stuffed.
  3. Enter the date and time you want to serve.
  4. Pick your thawing method — refrigerator if you have days, cold water for same-day rescue.
  5. Press "Build my timeline" and write down the thaw-start date.
  6. On cooking day, verify 165°F with a thermometer — the timeline is a schedule, not a doneness guarantee.

Frequently Asked Questions

How long does it take to thaw a turkey in the refrigerator?

1–3 days for 4–12 lb, 3–4 days for 12–16 lb, 4–5 days for 16–20 lb, 5–6 days for 20–24 lb (USDA FSIS).

How long does cold water thawing take?

About 30 minutes per pound with the water changed every 30 minutes — 8 hours for a 16 lb bird. Cook immediately afterwards.

How long should I cook a turkey at 325°F?

2¾–3 hours for 8–12 lb up to 4½–5 hours for 20–24 lb, unstuffed. Stuffed adds roughly 15–30 minutes. See the chart above.

What temperature does turkey need to reach?

165°F in the innermost thigh, wing, thickest breast, and stuffing center — verified with a food thermometer.

How long should turkey rest before carving?

20 minutes, per USDA FSIS — juices set and the bird carves more easily.

Can I thaw a turkey on the counter?

No — bacteria multiply rapidly at room temperature. Refrigerator or cold water only.

Is this a substitute for a meat thermometer?

No. Time charts are estimates; 165°F on a thermometer is the only reliable doneness check.
